520			_aปัจจุบันความนิยมในการใช้สีธรรมชาติ ทดแทนสีสังเคราะห์มีแนวโน้มเพิ่มขึ้น โดยแหล่งสารสีที่มีการนำมาใช้มากที่สุดคือ สารสีจากพืช สัตว์และจุลินทรีย์ ซึ่งสารสีจากจุลินทรีย์แบ่งได้ 3 กลุ่ม คือ แบคทีเรีย เชื้อรา และไลเคนสารสีที่ได้จากแบคทีเรียส่วนใหญ่เป็นสารสีกลุ่ม carotenoid และ phycobilins ประกอบด้วย allophycocyanin, phycocyanin และ phycoerythrin ในสาหร่ายสีเขียวแกมน้ำเงินซึ่งใช้เป็นส่วนประกอบสำคัญในอาหารสำหรับการเพาะเลี้ยงสัตว์น้ำจำพวกปลาสวยงาม เชื้อรามีสารสีในกลุ่ม quinine naphthalene, melanin และ flavin ใช้ปรุงแต่งสีในไวน์ เต้าหู้ยี้ ใช้เป็นสีผสมในอาหาร ยา และเครื่องสำอาง ไลเคนสามารถสร้างสารสีในกลุ่ม anthraquinone และ naphthoquinone ให้เฉดสีเหลือง แดง จนถึงม่วง ใช้เป็นสีย้อม ในการผลิตสารสี ควรคัดเลือกสายพันธุ์จุลินทรีย์ที่มีประสิทธิภาพ สามารถเจริญเติบโต ขยายพันธุ์ได้ดี ผลิตสารสีได้สูง ทนทานต่อสภาวะแวดล้อม ไม่เป็นจุลินทรีย์ก่อโรค และไม่สร้างสารพิษให้กับผลิตภัณฑ์.
520			_aNow the popularity in the use of natural colors replace of synthetic colors has increasing. The sources of pigments that are used the most are pigment from plants, animals and microorganism. Pigments from microorganisms can divided into 3 groups are bacteria, fungi and lichens. Most of pigments from microorganisms are pigments in carotenoid and phycobilins group consist of allophycocyanin, phycocyanin and phycoerythrin in cyanobacteria which use as necessary substance in food for aquaculture in beautiful fish. Fungus have pigments in quinine, naphthalene, melanin and Flavin groups that use to color wine, pickled bean curd, used as coloring in food, medicine and cosmetic. Lichen can produce pigments in anthaquinone and naphthoquinone provide shades of yellow, red to purple that using as dye. In production of color must choose effective microorganism that can growth, propagated well, high production of color, environmental resistance, non-pathogenic microorganisms and no toxic to product.
