Honey is carbohydrate food type contain glucose and fructose about 5-99%, maltose, sucrose, lactose and dextrin. Real honey will has sucrose not exceed 5-8% by weight. Honey from various flowers will have different component and ratio of sucrose, lactose, maltose and other sugar cause physical property of honey be different such as honey from longan flower will difficult to crystallize, lychee honey, sunflower is easy to crystallize when meet cold or store for a long time. Good honey have viscous characteristic, clear, no scrap of bee body or anything mix in, sweet taste, specific aroma from type of flower, no bitter or burnt smell. To store honey must be in clean packaging, room temperature, sunlight cannot reach. In generally can store for 1-2 year which several of honey have no different in chemicals component and nutritional value.
