From preservative such as Benzoic acid, Sorbic acid, Nitrate and Nitrite, and from synthetic colors. They found that 62 % of samples use Benzoic acid and in the safety criteria, 37 % of samples use Sorbic acid and in the safety criteria has 1 sample use exceed the standard. Found the use of Nitrate and Nitrite about 37 % within the safety criteria and no use of synthetic colors on all samples. It was concluded that in 1 kilograms of Chinese pig sausage has amount of preservative that are 15.3 mg of Benzoic acid, 620 mg of Sorbic acid, 10 mg of Nitrate and Nitrite and has the risk of receive preservative exceed the standard remain lower than 12.5 % and risk of receive 0 % of synthetic colors.
